To prepare this delicious dish, start by cutting the stale bread into cubes a few hours in advance and moistening it with milk.
After 2-3 hours, begin kneading the bread thoroughly. Then, chop the leek and onion and sauté them with some butter. Next, take the Trentino sausage and sauté it as well.
Meanwhile, finely chop the parsley. Now, combine the soaked bread with eggs, sautéed leek and onion, cooked sausage, and finally, add the chopped parsley. Start shaping the mixture into balls, using breadcrumbs to help form them.
The canederli are now ready to be cooked. Boil them in water, similar to cooking gnocchi, for about ten minutes. You can serve them with melted butter or in a delicious meat broth.
