The Zelten

Today I prepared the traditional Christmas dessert from Trentino: Zelten. It’s cooked in many Trentino families in various shapes and decorations, gifted during the holidays as a wish for serenity, peace, and love.

We offer it to our guests spending the festivities with us, accompanied by a warm mulled wine or fragrant cinnamon tea.

We virtually give it to all those who have chosen us as their holiday destination, with the sincerest wishes for a Merry Christmas!

Preparation:

First, I prepare the chopped figs, place them in a bowl, add soaked raisins, all the roughly chopped dried fruit, and candied orange peel. I mix everything and add rum to soften it, letting it rest for a couple of hours.

Now, let’s prepare the dough: I put eggs and sugar in a bowl and beat them using a whisk. I add melted butter, combined flour and baking powder, and a pinch of salt. I add some milk to soften the dough. Then, I add the dried and candied fruit, mixing everything well.

I spread the dough in a buttered baking pan and decorate it as desired. Here, I used candied citron, candied cherries, pine nuts, almonds, and created a Christmas tree and some stars. Here, you should unleash your imagination and patience!

Now, we place it in a preheated oven at 180°C (356°F) for 40/45 minutes.

Enjoy it as a snack accompanied by mulled wine or tea when returning from your walks to warm up or as a dessert paired with a good moscato.”
