Good morning, everyone!

This late winter blast has caught me off guard! I was craving spring, but instead… well, it’s fine because we needed the rain to color our meadows! And above all, to make our “zicorie” grow!

You may be wondering what it is: it’s wild chicory that, in its evolution, produces a yellow flower (dandelion) and then a dandelion clock! It’s collected in meadows, preferably the smaller ones, as they are more tender. The cleaning and washing process is meticulous to remove any trace of soil, but when it arrives at the table, it’s a real delicacy!
