Vanilla biscuits

Sometimes you ask me what food I like to cook.

In the days leading up to Christmas holidays, I absolutely love baking cookies and sweets in general.
The scent they fill the air with makes the house feel warm and inviting, it warms your heart.

You feel like taking a little break, with a steaming cup of tea or hot chocolate.
And if there are some fragrant cookies nearby, everything becomes magical.

Ingredients:

280g all-purpose flour
210g cold butter (I used alpine butter and I can’t tell you how fragrant and full-bodied it is)
70g sugar
100g almond flour

To coat:

5 packets of vanilla sugar
5 tablespoons of sugar

Place the flour and cold butter, cut into pieces, in a food processor and blend until the two ingredients are well combined.

Add the sugar (70g) and almond flour and mix everything together quickly.
The dough will crumble but don’t worry.
Refrigerate for at least 30 minutes, then take a little of the dough, shape into finger-thick cords about 6/7 cm long, shape them into crescents and place them on a baking sheet lined with parchment paper.
Bake in a fan oven at 160°C for about 15 minutes or until the biscuits are golden brown.

Once removed from the oven, let them cool for a few minutes and then roll them in the vanilla sugar and sugar previously mixed together.

I don’t think they’ll last until Christmas, at least not in my house… but they’re so easy and quick to make that you can do it anytime.
