Ricotta Clouds with Leek Sauce and Trentino Cream
Today, I want to share with you this simple and delicious dish. Ricotta clouds are nothing more than spoon-sized gnocchi, ready in just a few minutes. However, they needed to be accompanied by something more flavorful than the usual melted alpine butter or crispy speck and cheese. I did some experiments, and in the end, the best option is leek sauce and fresh cream. It’s a tasty combination that I occasionally enhance with a sprinkle of smoked ricotta!
